Butter lemon shiitake 牛油香檸炒鮮菇


   


Ingredients:
300 gram Fresh Shittake Mushrooms
40 gram Unsaled Butter
2 tablespoons Vegetable Oil
2 tablespoons Light Soy Sauce
1/2 Lemon of juice


材料:
300 克   鮮菇
40 克   無鹽牛油

Ramen Egg (Marinated soft boiled eggs) make easy 簡易溏心蛋





My little boy and I were cuddling in bed after a bedtime story.

I said, "do you know how much I love you?  I love you to the moon and back."

Ethan's sweet smile spread on his face.  "Mommy, I love you to jupiter and back."

He just learned not long ago jupiter is much farther from us than the moon does.  What a sweet boy!

Lemony Parsley Salad 檸汁意大利芫茜沙津

  



  Are people considered to be unproductive when they are not employed?  If the people still engage in their lives and time to do things they love, but they just don't bring income, are they invalid?  I've been resting between jobs now.  While feeling happy that I can take a break doing something I enjoy, I can't help but feel guilty about using my time in this way.  A way that doesn't bring income, a way just about resting, a way just about forming a new routine I may like.  Fortunately, I do enjoy the life I am having and have been able to afford it.  Right now, I need just rest. 

  In order to adjust to the tighter budget routine, I made some changes.  No more extra money spent on clothing or cosmetics.  I used to do a lot of compulsive shopping and now it is actually a good time to alter myself.  For the grocery, I also budget carefully for each day and eliminate the food waste.  This part is actually a little tough since I am truly a foodie and think of eating all type of food constantly.  I've been manipulating "my rules" for a month; it isn't as difficult as I imagine.

One thing that makes me very uncomfortable is that I found myself having too much time and my social network is shrinking.  Not being able to work indeed limits the times I interact with people.  I miss the bustling sounds in the kitchen and all the laughers (even yelling) in the kitchen.  Now, I am a home cook.  Having to be in the kitchen with only my rules is fun of course, but it's very lonely.  There is no guidance, no comparison, no compliment.  Those four walls block me from the outside and no one actually knows what I am doing in my tiny little kitchen.  So I guess, making videos are the approach I take to connect with the world.  Funny is that I'm one of the ordinary people who feel crazily nervous in front of a camera.  Thanks for all the understanding for my stammers and mumbles.  They are the things I need to work on.  You see, I just find more things to do.  My life is actually very busy.

"I want to make some pancake for mommy and us, Daddy?" I heard Ethan said in the other room.

"I want to make one for myself, one for mommy, and one for you." Ethan added. "Come on, wake up!"  I could imagine Ethan was dragging his daddy's sleeve, trying to pull his daddy off bed now.  I giggled a little since it was the routine he'd been doing lately.

This smart little kiddo knew many process about making pancake (thanks for me, hehe).  He knew that the damp cloth placed under the mixing bowl is to stabilize the bowl while we whisking the batter.  He knew there have to be eggs, vanilla extract, flour, and butter in the recipe.  Ethan's eyes fixed on the whip, with one of his hand holding the bowl and the other whisking the batter.  He looked super grown up.  Sometimes I wonder if it was the imagine he had in his mind about me when I was working in the kitchen.

The pancake turned out not very puffy (because mommy didn't put enough baking powder...), but we were more than happy to shovel all of them into out tommies.  Ethan thought they were extra delicious because they were made by Mommy and him together.

Sichuan Peppercorn (Numb and Spicy) Chicken Wings 快炒麻辣花椒雞翼




  The Christmas tree at the lobby had already set up, and our christmas tree will be ready in a couple of weeks.  Things get busy and bustling, but I don't find much joy in it.  This Christmas perhaps would be the hardest one I experience.  I will be alone.  My son is going to celebrate this big festival with his daddy and his side of the family.  And me, who marital status just back to single, going to stay at home and watch the classic movie "Home alone".  It is the first festival I have no family around so I'm a little don't know how to prepare my emotions.  Is it very hard, or just hard?


Sichuan peppercorn is one of my favourite spices, and it can apply to almost all meat dish and even stew.  This chicken wings weren't as spicy as I thought (I eat very spicy), but you can always adjust the amount of the chilli flakes and peppercorn.

(Main Ingredients):
1 pound Chicken Wings
3 teaspoons Vegetable Oil (for stir fry)
3 slices Ginger


(Marinade):
1 teaspoon Sichuan Peppercorn, crushed
2 teaspoons Chili Flakes
5 gram Ginger, grated
2 tablespoons Shaoxing Wine
1/8 teaspoon Ground White Pepper
2 teaspoons Sesame Oil
1/2 teaspoon Salt



(主要材料):
1 磅   雞翼
3 湯匙   菜油 (煮菜用)
3 片   薑片


(醃料):
1 茶匙   花椒
2 湯匙   辣椒粉
5 克   薑蓉
2 湯匙   紹興酒

Braised Pig Tails with Oyster Sauce 蠔油炆豬尾




  The weather is so cold and wet these day.  A pot of braised meat, with a bowl of fragrant white rice bring me lot of comfort.  I was planning to go buy some chicken wing tips; I didn't found them, but got these.  Nowadays, pig tails are really not easy to be found in the market so I bought them home right away.

  These day I thought of my family in Hong Kong a lot.  I know my loving parents are doing great, and my sister and brother are also enjoying their lives with their behalf.  I ask myself how about me now.  Am I doing well in Canada here?  My health is deteriorating.  When the bad days hit, I almost lose. Cooking is the thing that saves me.  I can spend half of the day just to study recipes or make videos.  The process is very healing, and the food comes out always nice and yummy.  I hope you also enjoy my videos.





(Main Ingredients):
1 kg Pig tails
1 head Garlic
60 gram Ginger, sliced
1 bunch Green onion or Garlic Shoots (optional)
2 tablespoons Vegetbale Oil (for cooking)


(For blanching):
3 slices Ginger
Water


(Seasoning):
2 tablespoons Oyster sauce
5 tablespoons Sugar
1/4 cup Chinese Rice Wine
1/2 teaspoon Salt

一顆  蒜頭
60 克   薑未
一 束   青蔥 (可省略)
2 湯匙   菜油 (煮菜用)


(去水用材料):
三 塊  薑片


(調味料):
2 湯匙   蠔油
5 湯匙   糖
1/4 杯   米酒
1/2 茶匙   鹽
