Steamed Halibut with Black Bean and Garlic Sauce 蒜蓉豆豉蒸銀鱈魚




INGREDIENTS:
3 pcs  Halibut Fish
5-6 pcs Garlic Cloves
15 gram Fermented Black Bean
2 teaspoons Vegetable Oil

"I want to make some pancake for mommy and us, Daddy?" I heard Ethan said in the other room.

"I want to make one for myself, one for mommy, and one for you." Ethan added. "Come on, wake up!"  I could imagine Ethan was dragging his daddy's sleeve, trying to pull his daddy off bed now.  I giggled a little since it was the routine he'd been doing lately.

This smart little kiddo knew many process about making pancake (thanks for me, hehe).  He knew that the damp cloth placed under the mixing bowl is to stabilize the bowl while we whisking the batter.  He knew there have to be eggs, vanilla extract, flour, and butter in the recipe.  Ethan's eyes fixed on the whip, with one of his hand holding the bowl and the other whisking the batter.  He looked super grown up.  Sometimes I wonder if it was the imagine he had in his mind about me when I was working in the kitchen.

The pancake turned out not very puffy (because mommy didn't put enough baking powder...), but we were more than happy to shovel all of them into out tommies.  Ethan thought they were extra delicious because they were made by Mommy and him together.

Simple Chowder Soup 周打魚湯





Ingredients:
7 Garlic Gloves
1/2 Onion
60 gram Salted Butter
3 cups Chopped White Mushroom
120 gram Plain Flour
1 Litre Seafood Broth
170 gram Crab Meat
200 gram Corn

Breaded fish fillet




Ingredients:


6 pieces Frozen Sole, thrawed, washed, and patted dry
3/4 cup Seasoned Bread Crumbs
3/4 cup Flour
1 Egg
1/4 cup Whole Milk
1/2 teaspoon Salt
Vegetable Oil
Mayonnaise


Garnish:
1/2 half carrot, cut it into different sizes of stones
1 Black Olive, cut out one of the side as the eye
3 snap pea, washed and cut off both ends of each 




Instruction:

1. Boil the decorative carrot and the snap pea in a pot of water until they are cooked.  Run them under the tap water until they are cooled down.  Set them on a serving plate.










2. Set out two plates and a shallow bowl.  On one of the plate, combine the bread crumb and salt together.  Pour the flour on the other plate.  In the shallow bowl, whisk the egg and the milk together.






2. Add about 2 tablespoons of vegetable oil in a frying pan on the high heat.  When the pan is hot and ready, coat each sole with a thin layer of flour, dip it into the egg wash, and then coat it with the bread crumbs.






3. Fry the fillet for about 3 minutes.  Flip it over, and fry for another 2 minutes.  Remove it from the heat.  Serve it with mayonnaise.

Simple Carrot Soup




Ingredients:

2 cups Corn
5 carrot, plus 1 for the carrot crabs and fish
2 pieces Pork Chops, Rinsed and cut
Salt to taste



Instruction:
1. Put all the ingredients to a pot of water.  Cook it over high heat until boiling.
2. Turn down the heat to low and cook it for another 35 minutes.  Add salt.  Serve in warm.

Pesto Spaghetti Bird Nest



Ingredients: for 3-4 people


Shrimp:
1/2 cup Frozen Shrimp, unshelled
1/2 Ground Black Pepper
1/2 teaspoon Salt

Spaghetti:
2 3/4 cups Cooked Spaghetti
1/2 cup Pesto Sauce
6 Sun Dried Tomatoes
1/3 cup of Fresh Basil
1/2 teaspoon Salt

Garnish:
6-8 Bocconcini




Instruction:





1. Marinade the shrimp with the black pepper and the salt for 20 minutes.






2. In a large frying pan, heat two tablespoons of vegetable oil over high heat.  Add the basil and the sun dried tomatoes, and fry them until fragrant.


 



3. Pour in the spaghetti, pesto sauce, and the salt. Gently mix all ingredients together and cook for about two to three minutes.  Remove the spaghetti from the heat.

4. With a big folk, scoop up a small batch of spaghetti and twist it into a bird nest shape.  Put two pieces of bocconcini in the middle as the bird eggs.  Serve in warm.

Sauté sole fillet




Ingredients:
10 pieces Sole Fillet, halves
5 stalks Green Onion, rinsed, sliced
10 Ginger Slices
15 ml vegetable oil
30ml Shaoxing Rice Wine
1/3 teaspoon Salt



Instruction:



1. Heat up the vegetable oil over high heat in a frying pan.  Add ginger and salt.  Sauté it until fragrant.





2. Add green onion.  Sauté it for about 5 minutes and then add the sole on top.  Cook the fillet for about 5 minutes without stirring it.

3. Turn the fillet on the side gently.  Cook it for another 5 minutes.





4. Add the rice wine.  Cook the fillet for another 5 minutes, or until the fillet turn white.  Remove it from the heat.
