Baked Zucchini with Sun Dried Tomatoes 蕃茄乾香焗小胡瓜




The zucchinis are very juicy after baking.  With the nibbles of dried tomatoes, they can be the perfect appetizer or side dish.  I enjoy every bite of it, but my son thinks the dried tomatoes are a little too hard for him to chew.  If you are also going to make this for your young kids, try to mince the dried tomatoes or simply add less of them.  Enjoy.


Ingredients:
3 Zucchini
7-8 Sun Dried Tomatoes
1/3 cup Shredded Cheese (Mozzarella and Cheddar)
1 tablespoon Flaxseed Meal (optional)
1/3 cup Olive Oil

1 湯匙   阿麻籽粉 (隨意)
1/3 杯   檻欖油
