Creamy Spinach Dip





Ingredients:
2 cups White Beans
1/3 cup Pine nut, roasted
180 gram Firm Tofu
1 cup cooked spinach
4 Garlic Cloves
4 tablespoons Lemon Juice
1/2 teaspoon Paprika
1/3 teaspoon Ground Black Pepper
1 teaspoon Sea Salt
Pita Bread or Pita Chips (for serving)




Instruction:



1. Bake the garlic cloves for 20 minutes at 400F.  Peel off and discard the skins.  Set the garlic aside.






2. Blanch the spinach for about 30 seconds.  Drain it.







3. Coarsely chop the spinach.

4. Squeeze out as much water as you can out of the spinach.  Set it aside.







5. In a blender, add the garlic and the rest of the ingredients, except the spinach and the pita bread.

6.  Pulse the mixture until it is well combined.  Scrape it out of the blender with a spatular.






7.  Mix together the mixture with the chopped spinach.  Serve with pita bread.
