Lemon Blueberry Flat Cake (Vegan Recipe) 藍莓檸檬素蛋糕




The lemony smell of this cake from the oven was a kind of celebration for the beautiful sunshine today.  It's been months during which we could only stay indoor and keep our windows shut day to night, but today I sat in the sun outside without the heavy winter coat.  What a luxury to have sun shine right on you and warm up every inch of your body.   I sat quietly on the doorstep for the whole 20 minutes baking time.


You can try to make this cake in muffin cups (so they become muffins), or bake it in a small spring form as a round cake.  I just find that this flat cake method can achieve the texture I want - flaky on top, and moist and soft inside.  The essential point is simple.

Lemon Blueberry Cake (Vegan Recipe) 藍莓檸檬素蛋糕



Ingredients:
(Dry Ingredients)
1.5 cups All Purpose Flour
1/4 cup Walnuts, finely chopped
1 cup Blueberries
3 tablespoons  Brown Sugar
1/2 teaspoon Baking Powder
1/8 teaspoon Sea Salt


(Wet Ingredients)
100 ml Canola Oil (or any kind of light taste vegetable oil)
1 Lemon of zest
1/2 Lemon of juice
4 tablespoons Maple Syrup
170ml Unsweetened Soy Milk
1 teaspoon Vanilla Bean Paste (or Vanilla Extract) 


Sunshine Lemon Tea:
2 White Tea Bags (any kind of your flavour)
1/2 Lemon of juice (apparently it is the leftover lemon you have from this cake)
1 tablespoon Maple Syrup
1.5 cups Luke Warm Water (put the tea under the sun and let the sun does the work for you)



材料:
(乾材料)
1.5 杯   麵粉
1/4 杯   合核,切幼粒
1 杯   新鮮藍莓
3 湯匙   黑糖
1/2 茶匙   泡打粉
1/8 茶匙   海鹽

(濕材料)
100 毫升   芥花籽油 (或其他無味菜油)
1/2 個  檸檬汁
1 個   檸檬皮
4 湯匙   楓糖
170 毫升   無糖豆奶
1 茶匙   雲呢拿籽醬 (或雲呢拿香油)


陽光檸檬茶:
2 個   白茶包 (任何口味也可)
1/2 個 檸檬汁 (很明顯這半個檸檬是做這個蛋糕剩下的)
1 湯匙   楓糖漿
1.5 杯   溫水 (把茶放到陽光底下,利用太陽的熱力把茶味滲出)
