3 minutes Sandwich Pocket

How to make Beef Curry Rice 咖哩牛肉飯





The curry I use here is not spicy but has mild sweetness from apple and honey.  You can always find various brands and flavours at some big Asian supermarkets to suit your tastebuds.  I usually make a big pot of curry at a time and then freeze the leftover portion in a few small boxes for later, whenever I am not in the mood of cooking.  All I need to do  then is to just cook a pot of rice and to reheat the curry in a microwave.  Then I will have a homemade hot meal.



Ingredients: (yield about 6 potions)
700 gram Beef, cubed
2 Carrot, cubed
2 White Onion, thinly sliced
2 Potatoes, cubed
120 gram Japanese Curry Blocks
700 ml Water

How to make Sea Glass Candy WITHOUT A THEMOMETER (beach theme party recipe)




There was lots of sea glass on the beach where we once lived and my boy used to love picking it up.  He loves fish and ocean so it's easy for me to come up with an ocean theme party for his two year old birthday.  This candy is for the guests and for sure it will be a hit.  After making this candy many times, I already need not have a thermometer, as long as I keep a close eye on the syrup.  Now, I hope you will try this recipe out and have as much fun as I have making it, and forget the thermometer too.

1/3 cup Corn Syrup
6 tablespoons Water
Green or blue food colorant

Santa prep + Cornflakes Cookies Recipe 粟米片曲奇




These chewy cornflake bites are one of the delicious last minute cookies I recommend to all moms, who want to make your own cookies for Santa with your little one, but don't have the luxury of time or worry about the competence.  They are very easy to make and only call for four basic ingredients.  The only reminder is that the syrup turns hard pretty quickly after it's removed from the heat.  Enjoy the amusing spirit in the kitchen with your family.  Merry Christmas!

No bake Sweetheart Pie (A wonderful Valentine's gift) 甜心派




This pinky little pie is very appealing to me.  I would definitely have a big smile if someone made it for my Valentine's Day.  The dried fruits give a mild tangy flavour that's just enough to balance the sweetness from the chocolate and the marshmallow here.  If you want some crunchy bites, adding some chopped almond or pistachio is also a very good idea.




Ingredients:
300 gram Pink Chocolate Melts
1/2 cup Dried Cranberries
1/3 cup Green Candied Cherries, cut into small pieces
1/3 cup Dried Apricot, cut into small pieces
1/2 cup Marshmallow
3/4 teaspoon Mint Extract

My oven is certified.  Yes, just right before Christmas, my beloved oven went to RIP and I needed to bake some dessert for a family party for tomorrow.  This recipe saved me.  A 5-minute-stir plus 15 more minutes to form the shapes and to decorate.  These impressive cookies were born.  Anyone who needs to make some last minute cookies, here is the recipe:




Ingredients: (make 2-4 wreaths)
3/4 cup Unsweet Cornflakes
3/4 cup White Chocolate Chips
1/2 tablespoons Dried Cranberries, diced

Milky Chicken Stew 牛奶煮雞





It's a highly nutritious meal kids will love.  The chicken becomes extra smooth and fragrant after simmering in the bath of milk and cheese.  You can eat this as a stew, or serve it with a bowl of rice and pour a few spoonfuls of soup on top.  My little son easily gobbles down these pieces of smooth chicken.  The whole milk in this recipe is not recommended to substitute for any no fat or skimmed milk.  I really don't think they can do the same job as the whole milk.


Ingredients:
750 gram Chicken Thigh, boneless, skinned, and cut into bite size
2 cups Whole Milk
1.5 cups Shredded Cheese (prefer Cheddar and Mozzarella)
75 ml Rice Wine (white wine is also fine)
2 tablespoons White Miso (it's usually available in big Asian supermarkets)
20 Button Mushrooms

I sometimes wonder if other people cannot resist to buy sweet potatoes just like me.  Most of the time I really don't have any plan for them when I run to pay for them.  They are just adorable.  This recipe is one of the best ways to turn this humble root vegetable into some beautiful looking dessert, while still keeping its rustic flavour.




Ingredients:

Sweet Potato Filling:
300 gram Sweet Potato, thinly sliced
1/4 cup Brown Sugar (Add more if you have a sweet tooth)
2 gram Agar Agar Powder (Usually available in big Asian supermarkets)
100 ml Hot Water

Cake Wrap:
70 gram Plain Flour
2 Eggs
60 gram Icing Sugar
1/2 teaspoon Baking Powder

Glutinous Balls in Green Tea Red Bean Soup 綠茶紅豆白玉丸子




There is less than a week before Christmas.  Among lots of icing cookies and cakes, these white and silky rice balls also set a great atmosphere for a Christmas dessert on the table, in a much healthier way.  The addition of rice flour gives a firmer texture to the glutinous rice balls, with the sweet bean paste and the green tea.  This dessert can be served either warm or cold.



Ingredients:

For the glutinous balls:
120 gram Glutinous Flour
100 gram Rice Flour
1 tablespoon Sugar
120 ml Water

For the green tea sauce:
1.5 teaspoons Green Tea Powder
1 teaspoon Sugar
1 tablespoon Corn Starch
1/3 cup Water

For the red bean soup:
80 gram Red Bean Paste
2 teaspoons Water

Brussels Sprouts and Sausage Soup 球芽根籃肉腸湯






This is an easy soup I enjoy making during winter time, when the sun goes down at 4pm, and I just want to cuddle my little boy on the couch instead of making dishes for dinner in the kitchen by myself.  Besides the efficiency, this rich flavour soup provides the extra water and fat we need in the winter days.  The key of this quick and delicious recipe is the quality of the sausages.  So find a reliable meat shop that sells fresh and MSG-free sausages.




Ingredients:
600 gram Sausage, cut into bite size
3 Red Potatoes, cubed
2 cups Brussels Sprouts, halved
1 Red Onion, thinly sliced
4 cups Chicken Broth
2 cups Water
3 Bay Leaves
3 tablespoon Vegetable Oil

Fried Pork Stuffed Vegetable 煎釀三寶




Fried Pork Stuffed Vegetable is a dish my mom often made when I was little.  Besides pork, she liked to mix in a few water chestnuts to add a little crunch and a subtle sweetness, or she would substitute the pork for fish cake or fresh shrimp available in the fresh market.  In Canada, where we live, is not easy to buy any of the ingredients Mom had used except for the pork.  So, it is the way this version of the dish remains on our family menu.  Serve it with a bowl of steamed rice and enjoy the balance of the juices from the vegetable and the meat and I will call it a warm and substantial meal.



Ingredients: (make about 23 pieces)
600 gram Pork
3/4 cup Chopped Shallot
1 Egg
2 Green Bell Peppers
1 Japanese Eggplant
450 gram Firm Tofu
2 teaspoons Rice Wine
1 tablespoon Dark Soy Sauce
1.5 tablespoons Corn Starch
1.5 tablespoons Sugar
1/4 teaspoon Salt
1/4 cup Vegetable Oil (for frying)
Green Onion for garnish


For the Sauce:
1 teaspoon Dark Soy Sauce
1/4 cup Water
1 teaspoon Chicken Powder
1/2 tablespoon Sugar
1/4 teaspoon Salt
